so how are you feeling about your experiment with eating vegetarian?

Thanks for asking.

I'm still doing it.

I had been eating less and less meat for the past 10 years or so.

I started around the 1st of May to try for a week with no meat. Later in the month I saw an interview with Kathy Freston on Charlie Rose. The interview reinforced my commitment to experimenting with it. (I encourage you to watch the interview!!)

I don't find a problem in cooking at home - not that big of change from before. Eating out at lunch (my usual habit) is slightly harder. I do miss meat. I would say almost daily. But it's not a huge craving, it's just like a thought: gee a bowl of ice cream would be good right now. I eat ice cream probably once or twice a year. Once I have eaten, then everything is OK. I do feel better after meals - and that is good! I don't feel bloated, and it's easier not to overeat. Also, I seem to be savoring simpler things. One of my favorite evening meals this summer: 2 hard-boiled eggs served on fresh romaine with my special mustardy homemade vinaigrette, with toast and artichoke spread. I know - it sounds simple, but it's yummy. And just now, I finished a plum. And it was honestly a pleasure. Gawd - I know that sounds so unsophisticated.

When I was in San Francisco in May, I stumbled upon this sign on the side of a restaurant in Chinatown. It showed how many lives of animals are saved in one year of eating vegetarian, and how much water is saved, etc. etc.

I don't know - everything seemed to point this way. I'm 57, and I want to be proactive with my health. And I actually do worry about global resources and our lifestyle based on too much of everything.

Thanks for answering. I don't think those simple dishes sound at all unsophisticated! If anything, being able to savor something so simple seems sophisticated to me. One of my favorite quick and easy meals is to roast some asparagus and then serve that up with 2 fried eggs (over medium). Really simple to make.

Odd to me to think of a sign like that on a restaurant in Chinatown. Was it a vegetarian restaurant?

I haven't watched that interview yet though it's on my to-do-eventually list. I've been moving in the direction of eating less meat but haven't made the leap to full vegetarianism still. I'm open to the idea though so I'm always happy to hear of other people's experiences with it. Thanks!
